Freeze drying is the only home preservation method that takes food to a genuinely long shelf life while keeping its structure, colour and most of its nutrition. It is also the most misunderstood category in home food preservation, mostly because of how it is sold.
What the machine actually does
The food is frozen solid, then placed under a deep vacuum. At low enough pressure, ice sublimates, meaning it changes straight from solid to vapour without passing through liquid. That vapour is captured by a cold trap colder than the food itself. Because the food never thaws and never gets hot, the cell structure survives, which is why freeze dried strawberries stay strawberry shaped and rehydrate, while dehydrated ones shrink into leathery discs.
That physics is also why the machines are big and expensive. A compressor, a vacuum pump and a refrigerated trap are three substantial pieces of hardware, and the published weights of the units we track run from 108 lb to 254 lb.
How it differs from a dehydrator
A dehydrator blows warm air across food to evaporate water. It is cheap, simple and good at fruit, herbs, jerky and vegetables. It cannot produce the dry, crisp, fully rehydratable result freeze drying gives, and dehydrated food typically keeps for months to a couple of years rather than decades.
