What type of pressure canner is best?

Choose by whether you prioritise precision, low maintenance or convenience.

Can I use a pressure cooker or Instant Pot for canning?

No. Ordinary pressure cookers and electric multicookers are not endorsed for pressure canning low-acid foods unless the manufacturer publishes validated processes. Use a true pressure canner and tested USDA or National Center for Home Food Preservation recipes.

Why must low-acid foods be pressure-canned?

Boiling water reaches only 212F, which does not destroy the botulism spores that survive in low-acid foods. Only the roughly 240F reached under pressure makes vegetables, meats and beans safe, so they must be pressure-canned using tested processes.

What size pressure canner do I need?

Match capacity to your batches. A 16-quart canner suits smaller loads and is easier to handle; a 23-quart takes a full load of quart jars for volume canning. The canner must also fit and stay stable on your burner when full.

Do I have to test the gauge?

A dial gauge should be tested each season, usually at a local extension office, because an inaccurate gauge is a genuine safety risk. A weighted-gauge canner needs no gauge testing, which is part of its appeal.

Aluminum or stainless?

Aluminum heats fast and is lighter, which suits large canners; stainless is heavier but works on more cooktops, including many induction ranges. Check induction compatibility and burner size before buying.

Are electric pressure canners safe?

Only when used exactly as the manufacturer tested them, with validated canning programs for the food you are processing. Do not run a stovetop recipe unchanged on an electric canner.
