A chamber vacuum sealer removes air from a sealed chamber rather than from the bag opening. That single difference is why it seals liquids cleanly, uses cheaper bags, and costs more than an external sealer.
The chamber does the work
You place the whole open bag inside a rigid chamber and close the lid. A pump then evacuates air from the entire chamber at once, so the pressure inside and outside the bag drops together. Because nothing is being pulled through the bag opening, liquids stay put instead of rushing toward the seal bar. When the target vacuum is reached, a heated bar seals the bag, and the chamber re-pressurises, pressing the bag tight against its contents.
Why it seals liquids
External sealers fail on soups and marinades because they drag air, and any free liquid, out through the bag mouth. A chamber sealer never does that, which is why it is the right tool for brines, stocks and wet marinades. The trade-off is the "liquid point": at very low pressure, liquids can begin to boil, so most chamber machines let you stop the vacuum early for wet contents.
