Most dehydrator problems trace to airflow, temperature or prep: overcrowding causes uneven drying, too little heat is slow, and meat must reach a safe temperature for jerky.
Most dehydrator problems come down to airflow, temperature or how the food was prepped. Work through these before blaming the machine.
Food dries unevenly
- Overcrowded or touching pieces. Leave space so air reaches every surface; do not let slices overlap.
- Uneven slice thickness. Cut uniform pieces so they finish together.
- Vertical fan unit. Rotate the trays partway through; horizontal-fan units rarely need this.
Drying takes too long
- Temperature too low for the food, or the room is humid. Nudge the temperature up within the safe range and improve kitchen ventilation.
- Trays too full. Split the batch; airflow, not tray count, sets the pace.
Case hardening (dry outside, wet inside)
Drying too hot too fast seals the surface and traps moisture inside, which can spoil later. Use a moderate temperature and give it time rather than cranking the heat.
Jerky is not drying safely
Meat must reach a safe temperature to kill bacteria. Use the higher temperature range, and for extra safety heat the meat to 160F (165F for poultry) before or after drying, following a tested recipe. Do not dry meat at herb temperatures.
When it is the machine
