The most important canning decision is not which pot to buy but which method to use, and that is decided by one thing: the acidity of the food. Water-bath canning and pressure canning are not interchangeable.

The rule that matters: Water-bath canning is for high-acid foods only (jam, pickles, fruit, acidified tomatoes). Low-acid foods (vegetables, meats, beans) must be pressure-canned. Using the wrong method with low-acid food is a genuine botulism risk.

Why the difference matters

Boiling water only reaches about 212°F, which is enough for high-acid foods because acidity prevents dangerous bacteria. Low-acid foods lack that acidity, and the botulism spores they can carry survive boiling; only the roughly 240°F reached in a pressure canner destroys them. That is why you cannot water-bath can vegetables or meat, and why a pressure canner is required for them. Tomatoes sit on the line: with added lemon juice or citric acid to raise acidity, they can be water-bath canned safely.
