The most important thing to know about vacuum sealer bags is that they are not all interchangeable. The texture of the bag decides which kind of sealer it works with, and getting it wrong is the number-one reason a vacuum bag fails to seal.
Why texture matters
An external, or suction, sealer clamps the open end of the bag and sucks air out through that opening. For the air to escape, it needs channels to travel along, which is exactly what the embossed dots or diamond pattern on a textured bag provide. A smooth bag has no channels, so when an external sealer clamps it shut, the air has nowhere to go and the vacuum fails. A chamber sealer works differently: it places the whole bag inside a chamber and removes the air from the chamber itself, so smooth, cheaper bags work perfectly and no texture is needed.
