How it creates the vacuum
The sealer sits over the jar lid and its pump draws air out through the lid, lowering the pressure inside. With less oxygen around the food, the processes that stale, oxidise and spoil dry goods slow down, and the pressure difference holds the flat Mason lid firmly in place.
