Vacuum Sealing Jars vs Canning: The Difference
Vacuum sealing a jar removes air to slow spoilage of dry or refrigerated foods; canning uses heat to make food shelf-stable and safe. A vacuum seal is not a canning seal and does not destroy botulism spores, so low-acid foods must still be pressure-canned or refrigerated.

Why the difference matters
Removing air does slow the staling and oxidation of dry pantry goods, and it can buy a few extra days for some refrigerated leftovers. But it does not heat food, so it cannot destroy the Clostridium botulinum spores that thrive in a low-oxygen, low-acid, room-temperature environment. In fact, sealing low-acid food in an airless jar and leaving it on a shelf creates exactly the conditions botulism prefers. That is why vacuum-sealed jars of vegetables, meats or other low-acid foods must still be refrigerated or frozen, never stored at room temperature.
How to use each correctly
- Vacuum seal dry goods for the pantry, and use it to extend fridge or freezer freshness, not to replace refrigeration.
- Pressure can low-acid foods (vegetables, meats, beans) in a proper pressure canner using tested USDA recipes for shelf storage.
- Water-bath can high-acid foods (jams, pickles, most tomatoes with added acid) using tested recipes.
- When unsure, refrigerate. A sealed jar is not a safe shortcut for low-acid foods.
