Why the difference matters

Removing air does slow the staling and oxidation of dry pantry goods, and it can buy a few extra days for some refrigerated leftovers. But it does not heat food, so it cannot destroy the Clostridium botulinum spores that thrive in a low-oxygen, low-acid, room-temperature environment. In fact, sealing low-acid food in an airless jar and leaving it on a shelf creates exactly the conditions botulism prefers.
