How Long Does Preserved Food Really Last? (Master Chart)

By PantryGear Lab Editorial Team
Quick answer

Preserved food shelf life varies by method: home-canned food is best within a year; dried food keeps months to a year or more airtight; frozen food stays safe indefinitely but is best within months; vacuum-sealed food lasts far longer than unsealed; and fermented vegetables keep months refrigerated. Most "best by" times are about quality, not a safety cliff, except for canning safety rules.

Every preservation method buys you time, but how much? This master chart pulls together realistic shelf lives across canning, drying, freezing, vacuum sealing and fermenting, with links to the detailed guides for each.

Quality vs safety

Most "best by" times are about quality, not a safety cliff. Correctly preserved food is often still safe past its best window; colour, flavour and texture just fade. The exception is canning safety, follow tested methods, and discard any jar with a failed seal or off signs.

How to get the longest life

  • Airtight and cool is the universal rule, heat, light and air shorten every method.
  • Vacuum sealing pushes drying and freezing to the top of their ranges; see the best vacuum sealers.
  • Label and rotate, use the oldest first.

Frequently asked questions

How long does home-canned food last?

Correctly canned and sealed, it is usually best within about a year for quality, and often safe beyond that if the seal holds. Quality (colour, flavour, texture) declines slowly over time.

Does frozen food ever go bad?

Kept solidly frozen at 0F, food stays safe more or less indefinitely, but quality fades over months. The times given for freezing are for best quality, not safety.

Which preservation method lasts longest?

For dry staples, mylar with oxygen absorbers can last years. Among everyday methods, freezing and proper canning give the longest storage; drying and fermenting vary by food.
